Biogenic amines are basic nitrogenous compounds with low-molecule-mass,and occur universally in animals,plants and femented foods.Biogenic amines possess the function of physiology and toxicity.Biogenic amines are formed by decarboxylation of their precursor amino acids,as a result of the action of either endogenous amino acid decarboxylase activity or by the growth of decarboxylase positive microorganisms.The content of biogenic amine depended on the characteristic of food and the varieties of microorganisms in it.A lot of proteins existed in aquatic products,and peptides and amino acids were produced in the course of processing and storing.Subsequently biogenic amines were transformed easily by these low-molecule-mass matters.The varieties and the biosynthetic mechanism of biogenic amines,and the factors affecting the formation of biogenic amines in diferent aquatic product were summarized.The analytical methods for the determining of biogenic amines were introduced,and the control measures preventing the formation of biogenic amines were discussed.
