魔芋葡甘聚糖复配膜对常温芒果保鲜效果的影响被引量:13

利用魔芋葡甘聚糖复配膜、聚乙烯薄膜和无包装等处理,对"海顿1号"芒果进行采后常温(相对湿度为50%,温度为25℃)贮藏保鲜,并对货架期间芒果的硬度、病害、烂果率、失重率、可溶性固形物、呼吸强度、维生素C、可滴定酸和SOD,PPO,POD含量的变化进行了研究。结果表明:经魔芋葡甘聚糖复配膜和聚乙烯薄膜处理的芒果在第12天达到呼吸高峰,呼吸高峰与CK相比推迟了6d,且第9天时,SOD含量为CK的1.75倍。同时,魔芋葡甘聚糖复配膜和聚乙烯薄膜还能减少芒果病害、腐烂率与水分散失,保持较高的果实硬度和VC含量,降低果皮中PPO和POD活性,有效抑制芒果贮藏期间果皮褐变的发生,阻止可溶性糖积累和可滴定酸降解,延缓芒果的后熟进程。其中,魔芋葡甘聚糖复配膜比聚乙烯薄膜效果好,能更好地改善芒果在货架期的品质表现。

涂膜在柚子保鲜上的应用被引量:7

分别采用魔芋葡甘聚糖复合膜液、羧甲基壳聚糖膜液及可溶性淀粉膜液对琯溪蜜柚进行涂膜保鲜,并研究了常温贮藏期间柚子有机酸、呼吸强度、乙醇含量、失重率、过氧化氢酶活性等指标的变化。结果表明:涂膜保鲜的有机酸、呼吸强度、乙醇含量、失重率、过氧化氢酶等指标的值均低于对照组,涂膜保鲜能有效延长柚子的保鲜期,其中,可溶性淀粉膜对蜜柚的保鲜期能达到80d,羧甲基壳聚糖膜对蜜柚的保鲜期能达到90d,魔芋葡甘聚糖薄膜对蜜柚的保鲜期能达到120d。

浓硫酸法制备魔芋葡甘聚糖硫酸酯(KGMS)被引量:2

以魔芋葡甘聚糖(KGM)为研究对象,采用浓硫酸法制备魔芋葡甘聚糖硫酸酯(KGMS)。控制浓硫酸与正丁醇总体积为10mL,并在单因素实验的基础上,选择浓硫酸与正丁醇体积比、反应时间和KGM质量为自变量,KGMS取代度为响应值,利用Box-Benhnken中心组合设计原理和响应面分析法,研究各自变量及其交互作用对取代度的影响,模拟得到回归方程的预测模型。确定最佳制备工艺为:浓硫酸与正丁醇体积比为3.22∶1、反应时间为33min、KGM质量为0.59g。在此条件下制备的KGMS的平均取代度为0.93。通过红外光谱分析表明,经过酯化后KGM在1257cm-1和814cm-1处形成新的吸收峰,为S=O和C-O-S键的特征吸收峰,说明KGM硫酸酯化成功,制备获得的产物为KGMS。

Effects of High-voltage Pulse Electric Field Treatment on the Structure Stability of Konjac Glucomannan被引量:3

Structures of KGM treated in two high-voltage pulse electric fields were characterized by infrared spectroscopy,Raman spectroscopy,X-ray diffraction and so on.The results showed that intermolecular hydrogen bonding interactions of KGM were reduced after being treated with high-voltage pulse electric field,but there was no significant effect on its fiber chain form and thermal characteristics.Results of the study can provide a useful reference for further study on the structure and property of KGM,and especially can provide theoretical basis for the effect of physical field on the foodstuff deep processing related to KGM.

Studies on the Molecular Chain Conformation Stability of Aminated Konjac Glucomannan被引量:5

Konjac glucomannan(KGM)was aminated by 2-chloroethyl-amine(CEA)as reagent so as to study the influence of concentration of CEA(based on the amount of KGM),concentration of NaOH,reaction time and temperature on the extent of amination.And the molecular simulation technology was adopted to analyze the conformation stability of aminate(AKGM).The results indicate that when the amount of CEA is higher,the extent of amination is higher.The optimum concentration of NaOH,reaction time and temperature are 10%NaOH,70℃and 45 min,respectively.IR shows KGM is successfully aminated.The conformation of AKGM is in a random clew-like shape.

Effects of Irradiation on the Structure-activity Relationship of Konjac Glucomannan Molecular Chain Membrane被引量:1

To know the effects of irradiation on the konjac glucomannan (KGM) molecular chain membrane, KGM membrane solution was treated with the irradiation dose of 0-20 kGy in this study, and the structure and properties of KGM membrane were analyzed with Infrared spectrum, Raman spectrum, X-ray, SEM scanning and so on. The results revealed that the effects of different irradiation doses on the KGM molecular chain structure were different. Higher irradiation dose (20 kGy) resulted in partial damage against KGM membrane crystal structure, and there was no obvious change for the amorphous structure; with membrane property test, the tensile strength of KGM membrane gradually increased with the increase of irradiation dose and its elongation at break reduced, but these changes were not significant, WVP value reduced; with SEM, the membrane surface treated with irradiation was smoother even than the membrane without treatment. In addition, when increasing the irradiation dose, membrane surface became more even, and arrangement was more orderly and compact. Irradiation modification could effectively improve the KGM membrane properties, and it is an ideal modification method.

凝胶属亚稳体系,提高凝胶热稳定性是食品科学基础研究中的瓶颈问题。本文综述了魔芋葡甘聚糖(KGM)不可逆凝胶研究进展及其研究中存在的问题,并对研究方向进行展望,为KGM非碱不可逆凝胶的研究提供理论基础和科学依据。

魔芋葡甘聚糖和大豆蛋白在面包中的应用被引量:4

为了改善面包的品质和感官特性,提高其营养,将魔芋精粉和大豆蛋白粉添加到面包中,研究其对面包品质的影响.结果表明:当魔芋精粉添加量为w=0.3%、大豆蛋白粉添加量为w=5%、醒发时间为70min时,所制得的面包色泽金黄、烤香浓郁、组织呈蜂窝状、入口疏松、营养丰富,而且魔芋-大豆面包的菌落总数明显低于普通面包,更有利于保存.

Biological activity of konjac glucomannan is closely related to its structure,in particular to its high-level structure.Researches on the activity mechanism of konjac glucomannan are significant for revealing the mysteries of participation in life activity.In this paper,analysis of the effects of konjac glucomannan configuration and various factors on its structure and activity was conducted,mechanism of biological activity of konjac glucomannan was explored,and the hot research topic of konjac glucomannan was given.

Influence of Konjac Glucomannan on the Crystallization Morphology and Structure of Calcium Oxalate

The influence of additive Konjac Glucomannan (KGM) in a variety of con- centrations on the crystallization morphology and structure of calcium oxalate (CaOxa) has been investigated by infrared spectroscopy, scanning electron microscope, X-ray diffraction and so on. The results showed KGM can complex with the Ca2+ions; low concentration KGM prevents CaOxa from aggregating, raises the concentration of ions in the solution, reduces the quantity of crystals and inhibits their growth, and the crystals are round and blunt; while high concentration KGM promotes the growth of crystal, which appears in sheet-like or irregular shape. Only CaOxa monohydrate was observed in a certain system with or without the presence of KGM.
